Leek & Potato Soup



-1/2 a leek

-3 small potatoes

-1 large onion

-2 cloves garlic

-1 litre veg stock

-50ml cooking cream (optional)

-knob of butter or 1 tsp coconut oil

-salt and pepper to season


-Clean veg, and peel potatoes, onion & garlic.

-Roughly chop onion, potatoes, garlic & leek.

-Add butter/oil to a large saucepan and fry onions, potatoes & garlic for around 3-4 minutes until starting to soften.

-Add leek with 1 litre of stock and bring to the boil.

-Season well and simmer until vegetables are soft.

-Using a hand blender, blitz until smooth. Reheat in a new pan adding the cooking cream if you wish. Heat through and enjoy!
